About This Plant

Culinary sage is a kitchen garden essential with a flavor that has no real substitute: earthy, piney, and slightly peppery with a savory depth that defines classic dishes from stuffed turkey to brown butter sauce to saltimbocca. It's the leaves that do the work, fresh or dried, and the aromatic oils responsible for that distinctive flavor are strongest just before the plant flowers. Salvia officinalis is an evergreen shrubby perennial that stays productive for years with minimal effort.

In the garden it forms a mounding plant roughly two feet tall and wide with soft, slightly rough-textured leaves in gray-green. It thrives in full sun and well-drained soil, conditions that mirror its native Mediterranean habitat. It's notably drought-tolerant once established and handles the cool, damp winters of the Oregon coast well as long as drainage is good. Harvest leaves regularly throughout the growing season, which encourages bushy, compact growth.

Beyond the kitchen, sage earns its keep as an ornamental.
