About This Plant

Copenhagen Market is one of the great heirloom cabbages, and for good reason. Introduced in Denmark in 1909, it has spent over a century earning the loyalty of home gardeners and market growers alike. The heads are dense and uniform, typically 6 to 8 inches across and weighing 3 to 4 pounds, with blue-green outer leaves that wrap tightly around a creamy, pale interior. The texture is firm and crisp, and the flavor is genuinely sweet in a way that reminds you why fresh garden cabbage is a completely different vegetable from what sits in grocery store bins.

This variety earns high marks for its flexibility in the kitchen. Raw, it brings that satisfying crunch and clean sweetness to slaws and salads. Cooked in soups or braised dishes, it holds its structure beautifully. It is the classic choice for traditional preparations like sauerkraut and stuffed cabbage rolls. The heads also store exceptionally well.

Copenhagen Market is well suited to the cool, moist growing conditions of the Oregon coast and does not bolt prematurely in the cooler seasons. Plant in spring or late summer for a fall harvest.
