About This Plant

'Bouquet' is a widely grown dill variety selected for its vigorous upright habit, generous leaf production, and abundant large seed heads. It grows 2 to 3 feet tall with feathery, blue-green foliage and broad, flat umbels of small yellow flowers in summer. The name reflects its appeal as a cut herb: the flowering stems are long enough and showy enough to work in fresh bouquets, and the plant provides a continuous supply of both leaves and seeds for the kitchen.

Dill is one of the essential herbs for Pacific Northwest gardeners, especially for anyone who pickles cucumbers in late summer. 'Bouquet' is particularly valued for seed production, making it the go-to choice for pickling dill, though the leaves are equally flavorful for use fresh in fish dishes, dressings, and potato salads. Direct sow into a sunny spot with well-drained soil and let it grow. Dill has a long taproot and does not transplant well once established, so starting it where you want it is the best approach.

It attracts swallowtail butterfly caterpillars, which will feed on the foliage. If you want dill for harvest, plan to grow enough for the butterflies and yourself. Succession sowing every few weeks extends the fresh leaf harvest through the season.
