Each plant produces up to eight rounded, green heads with a sweet flavor and tender texture that holds up well to steaming, roasting, or braising.\u003c\/p\u003e\u003cp\u003eArtichokes thrive on the Oregon coast, where the mild winters and cool summers suit them nearly perfectly. 'Tavor' is reliable as a perennial in our climate, dying back after hard frosts and re-emerging vigorously from the crown in spring. Cut the central bud first to encourage side budding, and harvest while the bracts are still tight and the head feels heavy and firm. Once the bracts begin to open, the quality declines quickly.\u003c\/p\u003e\u003cp\u003eGive artichokes a generous planting space, at least four feet between plants, and enrich the soil with compost at planting. They are hungry feeders and respond well to a balanced fertilizer in spring. Divide crowns every three to four years to maintain vigor.
